🌈Ingredients:
Glutinous rice skin:
Glutinous rice flour 100g
Corn starch 30g
30g sugar
Milk 170g
12g butter
Matcha powder 4g

Matcha custard:
Matcha powder 5g
Milk 100g
150g light cream
25g sugar
10g gelatine tablets (vegetarians can use Geely T instead)

Jasmine Cream:
300g light cream
Dried jasmine 3g
20g sugar

practice:
1⃣️Pour light cream + dried jasmine flowers into the pot, heat over low heat until slightly boiling, pour into a container, seal and refrigerate overnight.
2⃣️ Stir the milk + matcha powder thoroughly and pour it into the pot. Add sugar and light cream and heat over low heat. Stir evenly until it boils slightly. Turn off the heat. Add soaked gelatine sheets (vegetarians can use gelatine T instead) and stir until melted. Pour into the mold, seal and refrigerate to solidify. Cut the solidified custard into cubes and set aside.
3⃣️Sift the refrigerated jasmine cream, add sugar, beat until there are obvious lines, and put it into a piping bag.
4⃣️Mix glutinous rice flour + corn starch + sugar + milk, sift it once, cover it with plastic wrap, poke a few holes and steam it in a pot. After steaming, add butter and knead it evenly. Pull it repeatedly to make the dough more flexible. Add matcha. flour and knead it into the dough.
5⃣️Take 40g of dough and roll it into a round cake shape, place it on the snow meiniang mold, add cream, put matcha custard on it, squeeze on a layer of cream, seal tightly, cut off the excess dough, and sprinkle with cooked glutinous rice flour Anti-stick and anti-stick, turn upside down on the paper tray, refrigerate to set, finally squeeze on the cream and put jasmine flowers to decorate.
