🌈200g high-gluten flour, 160g milk, 20g sugar, 2g salt, 3g yeast, 10g butter
[1] Dissolve milk + sugar + yeast, add high-gluten flour and salt and stir evenly. Pour the liquid into the flour and mix evenly. Add melted butter and stir until absorbed. Cover with plastic wrap and ferment at room temperature until doubled in size (I use a spatula throughout) .
[2] Press the fermented dough gently to deflate the air, roll it into a 1 cm thick dough sheet, cut it into small squares, round each piece and place it on the baking sheet, leaving some space in the middle.
[3] Ferment in the oven at 35 degrees for 50 minutes, ferment to 1.5 times in size, brush the surface with milk, bake in the oven at 160 degrees for 20 minutes, and brush with butter after taking it out of the oven.
